coconut chia pudding

Happy New Year's to you!
Here's a recipe for a great start to the new year.

Coconut Chia Pudding

I used to make this recipe all the time.  It is a great snack or even a breakfast food.  I like it when I have a hankering for something a little sweet before bed. As usual, I'd like to start the new year resolving to eat a little better and this recipe is healthy and easy!

Coconut Chia Pudding
Mix all items together in a bowl and pour into the jars.  If you are using a pint sized jar, you can pour everything straight into the jar, seal it tightly, and shake shake shake.

Leave in the refrigerator overnight and enjoy.  Sometimes I put a little into a bowl and add fresh fruit.  Other times, I just scoop out a spoonful and nibble away.

  1. I have just made this delicious concoction for the second time. It is delicious. I used agave syrup which is my liquid sweetener of choice. It was delicious and really handy to have when I want something sweet but healthy. I put it on fresh fruit, as recommended. My husband loves it too! Thanks for this easy and tasty treat.
